Lightly curried smoked haddock soup

Sauteed scallops on grilled black pudding with celeriac remoulade and an orange and chive vinaigrette

Pressed duck terrine with toasted brioche and pickled plums

Twice backed parsnip souffle, onion marmalade and a parmesan cream

Main courses

Roast goose breast, served pink, with crisp confit leg, haricot bean cassoulet and a port sauce

Grilled whole lemon sole with a dill and pink peppercorn butter sauce

Sauteed Aberfoyle rib-eye steak with garlic potatoes, blue cheese, mushroom and red wine sauces

Wild mushroom, leek and pinenut cannelloni with a baked tomato-stuffed pepper
